UGA professor Doug Peterson is quoted in a New York Times article about the differences between caviar and roe. Peterson, an assistant professor of fisheries and aquaculture research in the Warnell School of Forestry and Natural Resources says there is a big difference. "Caviar only comes from sturgeon...everything else is fish eggs," he said
