Chef wins culinary challenge at conference

Congratulations to Bolton Dining Commons Chef Brandi Allen for winning the Premier Breakthrough Conference championship with her innovative dish, a red wine-marinated flank steak with cauliflower puree and spicy sweet potato chips.

Allen’s challenge was to craft a meal for under $8.50 per person. Her winning dish not only met the budget criteria, but it also showcased her culinary expertise and ability to combine flavors and textures in a unique way.
