‘Roe’ over caviar

Doug Peterson, an assistant professor of fisheries and aquaculture research in the Warnell School of Forestry and Natural Resources, was quoted in a New York Times article about the differences between caviar and roe.

“The FDA looks at the word ‘caviar’ as synonymous with roe, but that is not true,” said Peterson. “Caviar only comes from sturgeon. Everything else is fish eggs.”
